Thanksgiving menu ideas
What are your favorite low carb side dishes and desserts to serve for Thanksgiving? Post your menus and recipes here.

THANKSGIVING DINNER 2004
Roast Turkey
Low Carb Stuffing
Faux Mashed Potatoes
Turkey Gravy
Buttered Green Beans & Carrots
Raspberry Dream Jello
Crustless Pumpkin Pie with Whipped Cream

Here is what I will probably serve for Thanksgiving dinner this year:

Roast Turkey
Sausage-Mushroom "Dressing"
Faux Mashed Potatoes and Gravy
Dottie's Green Bean Casserole OR Todd's Green Beans
Mashed Rutabaga
Cranberries or some sort of jello salad
Homemade Yeast Rolls
Pumpkin Bake with Whipped Cream

The rutabagas are traditional for Thanksgiving in my husband's family so they are a must. The rolls will be for anyone who isn't low carbing. I'm not sure yet which green bean recipe I'll make. I'm thinking that the green bean casserole might be a little too rich along with the sausage dressing which is also pretty rich. I may tweak the pumpkin bake a little and add more cream cheese to make it more cheesecake-like but we'll see.

My menu will look similar to yours Linda, but we always have to have deviled eggs and black olives!

LindaSue, you know your recipe for "Chicken and Sausage with Mushrooms & Cauliflower"? I tweaked it the other day and I'm going to make this as our stuffing/dressing recipe for Thanksgiving. It's "dressing" like and it's so darn good, I could eat it every day!

My dh and I will have 3 low carb side dish options. I'm making a spinach salad, the sausage/mushroom/cauli dish, and a low carb cheesecake. I'm looking forward to that fried turkey, yum-o!

Paula, that casserole was also the inspiration for my Sausage-Mushroom "Dressing". I later came up with the recipe below which I eat as a main dish even though it is also a lot like stuffing/dressing.

TURKEY AND DRESSING CASSEROLE
1 1/2 pounds frozen cauliflower
1 pound pork sausage
20 ounces ground turkey
2 stalks celery, chopped
1 medium onion, chopped, 4 ounces
1 pound mushrooms, quartered
8 ounces cream cheese, softened
8 ounces cheddar cheese, shredded
Poultry seasoning or seasoning of your choice
Salt and pepper, to taste

In a very large soup kettle, cook the cauliflower as directed on the package until tender; drain very well. In the same pot, brown the sausage and turkey along with the celery, onion and mushrooms. Season with poultry seasoning, salt and pepper. Drain the fat, but keep the meat in the pot. Stir in the cream cheese until well blended, then add the cauliflower and cheddar cheese. Adjust the seasonings, if necessary. Spread in a greased 9x13" baking pan; cover with foil and bake at 350ยบ for 30 minutes. Uncover and bake an additional 20-30 minutes or until hot and bubbly and the top is browned.

Makes about 8-10 servings

Per 1/8 Recipe: 541 Calories; 41g Fat; 35g Protein; 9g Carbohydrate; 3g Dietary Fiber; 6g Net Carbs
Per 1/10 Recipe: 433 Calories; 33g Fat; 28g Protein; 7g Carbohydrate; 2g Dietary Fiber; 5g Net Carbs

Either Pumpkin Bake or Crustless Pumpkin Pie

I haven't ever seen low carb gravy or low carb "stuffing". So that may be added. It's only two of us this year so, I don't need a lot.

I will mostly cater to the high carbers this Thanksgiving but I will make these three things that I can eat along with my turkey:

The one thing that I'm not sure about yet is if the mushrooms will turn rubbery when I thaw the dressing. Since I'm the only one who will be eating it, I'm not going to worry about it too much. I might worry more if I was serving it to company though.
