What did you eat for Thanksgiving 2008?
Hey forum members,

I know, as of the date of this post Thanksgiving Day has not yet arrived. But it will be here in just a few days and I have an idea that popped into my head while I was going to sleep last night. Since we all have digital cameras, camera phones and ways to take pictures, how about if everyone snaps a photo of their Thanksgiving Day meal?

Then you can upload the photos to your favorite photo holding site (PhotoBucket and Flickr are the two most popular) and then post them here for us to see and archive for people looking for examples of what a low-carber can eat on Thanksgiving. It's super easy to put pictures in the forum. Just type "[IMG]" and then put the URL of the photo in the middle and close the HTML code with "[/IMG]" to get your photo to show up. Be sure to write a caption underneath the photos so we know what we're looking at.

Sound like fun?! Hopefully we will fill up this thread with LOTS of delicious Thanksgiving Day meals that would make Dr. Atkins proud. Big Grin HAPPY THANKSGIVING!

I will try to take a photo but it's not easy when you're the cook and everyone is waiting for you to sit down at the table so they can start eating. They might not want to wait while I take a picture of my dinner, LOL.

The lighting isn't the greatest for taking photos in the dining room. I'll just let everyone else start eating while I take my plate to the kitchen for the photo. I'll take the dessert photo separately because I'll be putting whipped cream on my Pumpkin Bake and it wouldn't hold up very well through the whole dinner. Come to think of it, I can just use the photo of the dessert from my website. It will look exactly the same.

Gravy
Lingonberry Sauce
Praline Pumpkin Pie w/ Whipped Cream

Gravy had about 3g carb and the lingonberry sauce was for my husband. The side dishes and desserts ended up being George Stella recipes. I had one round of food and that was good enough for me. My blood glucose only got to 108mg/dl. Thank you all for the ideas and recipes.

1 small bite of sweet potato casserole (not too good, my mom put wayyyy too much syrup)
1 tbls of this spectacular cranberry sauce from Fresh Market

I ate Turkey and green beans with bacon. not much else.....

I didn't think of getting a picture--but I had:

Turkey with gravy made with Not/Starch
deviled egg
sausage and squash stuffing
green beans with cheese/rotel
a slice of gooey pumpkin butter cake

I always endulge with a couple of LC treats on Thanksgiving!

Healthy Pumpkin Gooey Butter Cake
Adapted from a recipe by Paula Deen

Serves eight

Ingredients:
Crust Layer:
1/4 cup of organic unsalted butter, melted
2 ounces of cream cheese, softened
2 cups almond flour
1 large organic egg
1 teaspoon pure vanilla extract
1/8 tsp sea salt
3/4 cup erythritol or 1/2 cup xylitol, powdered
1/4 teaspoon good-tasting pure stevia extract (NuNaturals)
1/2 teaspoon aluminum-free baking powder
1/4 teaspoon cinnamon

Filling Layer:
8 ounces cream cheese
1 stick unsalted organic butter, melted
1 can pumpkin, packed
3 eggs
1 teaspoon pure vanilla extract
3/4 cup erythritol or 1/2 cup xylitol
1/4 teaspoon good-tasting pure stevia extract (NuNaturals)
1 and 1/2 teaspoons cinnamon
1 teaspoon nutmeg
1/4 teaspoon ginger

Preparation:
Preheat oven to 350 degrees.

For crust, melt butter and soften cream cheese in microwave. Grind erythritol in coffee grinder and mix into batter. Mix together until smooth, then add vanilla, egg, and sea salt. Add stevia and baking powder. Scrape into an 8 by 8 metal pan and spread out over the bottom. Bake for 15 minutes and remove to cool.

Soften cream cheese and melt butter in microwave. Grind erythritol in coffee grinder or magic bullet. Beat cream cheese and pumpkin until smooth and without lumps. Add eggs, vanilla extract, and melted butter, and beat until incorporated. Next, add erythritol, stevia, cinnamon, nutmeg, and ginger, and mix just until smooth. Set pan down on counter top a couple times to get out air bubbles. Pour pumpkin mixture over crust and bake for 50-60 minutes, or until center jiggles a bit when you move the pan. It will set up and sink down upon cooling overnight in the refrigerator.

~4.5g net carbs per 1/8th recipe

Thanks ! If I leave out the stevia will it make much of a difference in the taste? Also, I'm assuming that the measurement for the erythritol is before grinding?

I made it once with a packet of stevita and once with a packet of splenda. Couldn't tell any difference. I did measure the erythritol before powdering.
